This is the easiest fish preparation method you will ever see.  For 3 minute meal prep you will need to thaw the fillet in advance. 

Once fully thawed the sockeye fillet will cook in less than 3 minutes at 50% power in most microwaves. 

For best results, you will need to experiment with your microwave.  It is important to make sure that the fish is fully thawed. Fish flesh is not as tough as animal muscle, so you want to cook it at as low a temperature for a short a time as possible to keep the fish tender.

Thawing:  Remove pouch from freezer and thaw in refrigerator 4-24 hours prior to cooking.  This allows the fillet to marinate in the sauce.

Quick thaw: Place in a medium pan and run a continuous stream of cool water through the pan for 15 – 30 minutes.  Do not leave out on counter.  Cook immediately.

CAUTION:  For food safety reasons, keep frozen.  Thaw under refrigeration.  Once thawed, do not leave in sealed pouch more than 24 hours.  If your plans change, pierce the bag and allow air in. 

To cook: Remove from bag and cook using your favorite method.  Fillet will be safe in refrigerator as long as smell and texture is good. 

Do not refreeze.
Microwave Cooking (after thaw): 

  1. Move fillet to pouch corner opposite the steam vent.  (see diagram )
  2. Fold up vented corner.  (see diagram )
  3. Place sockeye in microwave – skin side up.
  4. Cook pouch for 1 minute 45 seconds to 2 minutes 45 seconds at 50% power setting.  Note: Microwaves vary.  Thicker portion require more cooking time.  You will need to experiment with your oven for best cooking time.
  5. Let pouch sit in microwave for one minute before opening.
  6. CAUTION:  Carefully remove pouch from oven. Pouch will be hot; handle by edges.  Avoid steam vent.
  7. Carefully tear pouch at the notch.  Steam may vent through torn area.  Keep pouch opening away from face .
  8. If underdone, cook additional time on covered microwave-safe plate.  Do not overcook.
