Chickpea and Spinach Salad with Yogurt Sesame Dressing

Salad
2 15 oz. cans chickpeas, drained and lightly rinsed
Salt and pepper to taste.  Use sea salt for trace minerals.
1 cup baby spinach leaves (or parsley), washed, dried and minced finely

Dressing
Combine
2 tbsp. plain yogurt
1 tbsp. mayonnaise
2 tsp. sesame oil
2 tsp. lemon juice
1 teaspoon sesame seeds

Mix together and chill before serving. Prep time: 5 minutes or less.
