Mediterranean Tabouli - a delicious alternative to pasta!

After a workout, it’s time to restore your energy with an easy to digest starch.  Looking for an alternative to pasta?  Try this Mediterranean Tabouli salad.  It is off the charts in Vitamin K (over 900 % the DV), and has more than 100% the DV in Vitamin C and manganese.  It is also high in Vitamin A and loaded with good fiber.  Vitamin K helps you absorb mineral calcium, helps prevent hardening of the arteries and has demonstrated anti-cancer properties.  Vitamins A and C are powerful antioxidants to help relieve oxidation stress from your workout. 

Ingredients:

  • 1 cup wheat bulgur (dry) makes 2 cups after combining with liquid
  • 3 cups parsley, minced
  • 1/2 medium onion, minced
  • 1 medium tomato, chopped
  • 3 TBS extra virgin olive oil
  • 1 TBS fresh lemon juice
  • 2 cloves garlic, press or chopped (can used minced garlic in a jar from your supermarket)
  • sea salt and pepper to taste

Directions:

  1. Mince onion and press or chop fresh garlic and let sit for 5 minutes to bring out their hidden health benefits. (If using bottled garlic, simply add to the onion after it has sit for 5 minutes.)
  2. Place 1 cup wheat bulgur and salt to taste in a bowl. Pour 2 cups boiling water or broth over the bulgur, stir once and let sit for 15-20 minutes until liquid is absorbed.
  3. Combine all ingredients and mix well. Add fresh tomatoes at the end to improve texture.
